Texture modified meals, especially those that are pureed or minced, are intentionally altered to ensure they are safe to swallow for those with dysphagia.

Traditional presentation is often sacrificed for safety and functionality. Pureeing and mincing changes the appearance and texture of the food, making it look less like a traditional meal.

The International Dysphagia Diet Standardisation Initiative (IDDSI) framework provides a global standard for texture modified foods. The Pure Food Co offers both Level 4 Pureed and Level 5 Minced & Moist options.

The main difference between the levels is the texture and consistency of the food, with Level 4 being a smooth puree and Level 5 including small, soft pieces.

The Pure Food Co uses high-quality, real, fresh, locally sourced foods whenever possible, using foods you would usually find in your kitchen pantry at home. For example, with the Minted Peas, the primary ingredient is peas which make up 75% of the recipe. These are sourced from Canterbury, New Zealand. We then add water, oil, corn flour, additional pea protein as well as mint and a touch of salt to deliver an amazing tasting minted pea puree that delivers over 2 x the protein and 2x the fibre of a comparable serving of boiled peas.

The Pure Food Co uses high-quality, real, locally sourced foods whenever possible. The recipe for each product range is chef-inspired and uses natural fortification to increase the nutritional content. For example, The Pure Food Co broccoli contains more than double the protein than regular broccoli. This supports better health outcomes for residents.

Serving

  • There are several ways to add a finishing touch to your meals.
  • Play around with where you place items on a plate to create different plating styles.
  • Use different colours in each meal to create colour contrast.
  • Use complimentary sauces drizzled over the dish, which can enhance the look and flavour of the meal.
  • Be mindful to not over sauce meals.
  • Add a garnish to further enhance the visual appeal and flavour of a meal.

Please ensure that added sauces and garnishes are IDDSI compliant, and do not smother the food portions (as they can hide the colours and textures which are important visual cues for the diner).

  • Person-centred approach: Always involve the person in the planning and preparation of meals, taking into consideration their personal preferences, cultural background, and dietary needs.
  • Create a pleasant dining environment: The dining area should be clean, comfortable, and social. Make it as normal as possible by playing music, sitting at a table, and encouraging social interaction.
  • Present food attractively: Use only IDDSI compliant garnishes where appropriate to make meals look as appealing as possible.
  • Offer choice: Give people as much choice as possible about what they eat, when they eat, and where they eat, including snack options.
  • Provide adequate support: Ensure there are sufficient staff to assist with meals, at the pace the person prefers and providing encouragement if necessary.
  • Respect dignity: Provide support with care and respect.
  • Encourage participation: Where safe and possible, involve the person in meal preparation.
