A texture-modified diet consists of food and beverages that have been prepared to a special texture or consistency. This makes them easier to consume for those with dysphagia (the medical term for swallowing difficulties). By following a texture modified diet, the risk of choking or food entering the airway is reduced, promoting safer eating and drinking.
Who needs a texture modified diet?
- Those with dysphagia (difficulty swallowing) due to conditions that affect the mouth, throat, or oesophagus such as stroke or Alzheimer’s Disease.
- Individuals recovering from oral or throat surgery or treatment, requiring a puree or soft food diet.
- Those with digestive disorders
- Those who have been prescribed an IDDSI diet by a health care professional
The IDDSI Framework
The International Dysphagia Diet Standardisation Initiative (IDDSI) is an international standardised set of guidelines to ensure food and beverages are prepared correctly and consistently for individuals on Texture Modified Diets. These guidelines are widely promoted by dietitians, speech language therapists/speech pathologists, and healthcare professionals globally.
Because different types of modification are required based on a person’s needs, the IDDSI framework consists of eight different levels.

Nutrition and Dysphagia
Without proper texture adjustments, individuals with dysphagia may struggle to get enough nutrition and fluids, leading to malnutrition and dehydration.
Reports show 39% of individuals with dysphagia are at risk of malnutrition, as they may have lower food intakes due to a fear of choking and decreased food preferences related to need for safe food textures 1.
On the other hand, consuming foods and fluids that aren’t appropriately modified can increase the risk of choking and aspiration pneumonia.
